Simply Plain Muffins (vegan + GF)

Ingredients:
  • 1/2C Heavenly Protein Powder, Simply Plain
  • 1/2C gluten free oat flour
  • 1/2 tsp baking soda +1 tsp baking powder
  • Pinch of salt
  • 1/2 tsp cinnamon
  • 1/4C maple syrup
  • 1/2C almond milk
  • 3 tbsp peanut butter
  • 1 tsp vanilla extract
  • 1 large banana, mashed
  • 1/2C vegan chocolate chips

Steps:
  1. Preheat oven to 350F & grease 6 muffin tins (with coconut oil spray)
  2. Stir together oat flour, baking soda, baking powder, salt & cinnamon.
  3. Stir in the rest of the ingredients (besides chocolate chips) until combined
  4. Fold in chocolate chips
  5. Divide batter among 6 muffin cups
  6. Bake at 350F for 20 minutes

*Tastes amazing with almond butter on top
