Cinnamon Swirl Protein Mug Cake
- 2 scoops nuFYX Creamy Vanilla Heavenly Protein Powder
- 1/2 TSP baking powder
- 1 TBSP coconut flour
- 1/2 TSP cinnamon
- 1 large egg OR 1/4 cup liquid egg white OR 1 flax egg
- 1/4 tsp vanilla extract
- 1 tsp coconut sugar
- 1/2 tsp cinnamon
- Glaze (optional) melted coconut butter + 1/2 tsp almond milk + pinch of cinnamon)
- Grease a microwave safe bowl/mug with coconut oil spray
- Add the protein powder, baking powder, coconut flour, cinnamon & mix well.
- Add the egg or flax egg and mix into the dry mixture.
- Add the milk of choice and vanilla extract (batter should be thick)
- Transfer to microwave safe bowl/mug & top with coconut sugar + extra cinnamon and swirl over the top.
- Microwave for 1 minute & 10 seconds
- Top with glaze and enjoy!
