Chewy Almond Butter Protein Cookies

Ingredients:⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 1/3 cup Creamy Vanilla Heavenly Protein Powder⠀⠀⠀⠀⠀⠀⠀
  • 1/2C natural drippy almond butter⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 1/4 cup coconut sugar⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • pinch of salt⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 1 egg⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 2 tbsp almond milk⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 2 tbsp coconut flour⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 1/2 teaspoon baking soda⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 1/4C sugar free/vegan chocolate chunks or chips
  • Optional: sea salt to sprinkle of top⠀⠀⠀⠀⠀⠀⠀⠀⠀

Steps:⠀⠀⠀⠀⠀⠀⠀⠀⠀

  1. Preheat oven to 350F, line a baking sheet with parchment paper⠀⠀⠀⠀⠀⠀⠀⠀⠀
  2. In a bowl, combine almond butter, coconut sugar, salt, egg and almond milk.
  3. Mix until ingredients are well combined. Then add in protein powder, coconut flour and baking soda until well combined. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
  4. Fold in chocolate chips⠀⠀⠀⠀⠀⠀⠀⠀⠀
  5. Use a tbsp to drop a small cookie scoop to on the baking sheet. Flatten the tops of the cookies⠀⠀⠀⠀⠀⠀⠀⠀⠀
  6. Bake for 8 mins.⠀⠀⠀⠀⠀⠀⠀⠀⠀
