Simply Plain Muffins (vegan + GF)
Ingredients:
Steps:
*Tastes amazing with almond butter on top
- 1/2C Heavenly Protein Powder, Simply Plain
- 1/2C gluten free oat flour
- 1/2 tsp baking soda +1 tsp baking powder
- Pinch of salt
- 1/2 tsp cinnamon
- 1/4C maple syrup
- 1/2C almond milk
- 3 tbsp peanut butter
- 1 tsp vanilla extract
- 1 large banana, mashed
- 1/2C vegan chocolate chips
Steps:
- Preheat oven to 350F & grease 6 muffin tins (with coconut oil spray)
- Stir together oat flour, baking soda, baking powder, salt & cinnamon.
- Stir in the rest of the ingredients (besides chocolate chips) until combined
- Fold in chocolate chips
- Divide batter among 6 muffin cups
- Bake at 350F for 20 minutes
